Furthermore, a microphone doesn't "have" phantom power, rather, a condenser microphone that requires it must have it provided either by the mic preamp or a suitable inline adapter. The Presonus interface I linked in my answer provides phantom power with the "48V" button on the front.

Well in that case, you should definitely try to get low-impedance XLR microphones, like the SM58s that I linked above, and a multichannel interface like the Presonus to act as the mic preamp and audio interface. There really shouldn't be -anything- using 3.5mm in this kind of setup, except maybe for monitor headphoens.

Model #'s would be useful to help figure out what you actually have--I'd be wondering if the 3.5mm microphone you have is suitable for recording.

MIDI is fairly standardized; different implementations have certain quirks (like keyboards that think C3 is middle C instead of C4) but it's mostly standard. A MIDI file is essentially the same signals as you would get from a piece of hardware, but put recorded down with a timeline and occasionally meter information.
