You could also consider keeping the mic where it is and just record the audio to a separate device close to it (laptop, memo recorder). Later you can sync the audio with the video quite easily in post.

A black pixel will remain a black pixel. The information about the face is simply not there. You can change curves/levels/anything, if the information is not recored you can not retrieve it.

If you shoot with a DSLR there could be another reason of using 720p. Most DSLR's support 50/60fps at 1280x720, but only 25/30fps at 1920x1080. So if you want to slow down footage and need the higher frame count then you would use 720p.
