@houbysoft: Presumably you would need to "play" the note in the piano roll, and save the result to a .WAV file. You would have to do this for all 88 notes. If this seems too arduous, try the procedure described here (I haven't tested it, so I don't know if it really works or not).

You don't have to put the volume drops at the loudest parts of the audio, like the picture illustrates. You can put the volume drops anywhere you want. In your case, the volume drops would occur at the places where you believe the breaths are too loud.

@Cory: There is one kind of headphones that nobody has mentioned yet, and that is electrostatic headphones. Electrostatics are the only high-fidelity headphones that I would consider truly "high-impedance." The sound quality of electrostatics is unparalleled. But electrostatics are quite exotic; they require special high-voltage amplifiers, and are generally very expensive.

The Rode NT5-S is an excellent alternative; I've seen it used for choirs, drum overheads and acoustic guitars. It has a nice, neutral character, and it comfortably fits in your pocket. :)

@Ian: If you're mixing stereo, panning the stereo signals from the synth left and right leaves a bigger footprint on the mix, and there's only so much space available in the sound field.
