@ObscureRobot: I don't specially connect the foil (yes, I do mean aluminium) to ground, I just make sure that 1. all the foil parts are in contact with each other and 2. some washer (normally of the output jack and also of the potis) that's connected to ground anyway is pressed against the foil.

Good point, I've never tried this but I reckon it's in fact easier to handle than tin foil and should work just as well.

@filzilla: that doesn't matter much here, humbuckers are only less responsive to magnetic coupling (which is never affected by touching ground with your hands).

You definitely shouldn't be able to damage any guitar amp with a line-level source, it only won't sound very pleasing. Actually, line-level has similar voltages as electric guitars do (in particular active models), only the impedance is much lower. But that's mostly an issue when going from high- to low: a passive guitar "breaks down" when connected to a line input.

Have you also compared a 48 kHz version? Indeed, the difference between 48 and 96 should already be quite subtle and the difference between 96 and 192 should only be perceivable at all with very nonlinear (or badly designed) effects. Such a big difference as between you two examples should never happen, for any sample rates above 40 kHz. It is either a bug, or you have set up the synth in such a way that most of the sound actually comes from re-amplified aliasing artifacts.

Hiss like that (white noise) has little to do with shielding, it just comes from badly-designed analogue circuitry, usually microphone preamps. It's ok when you feed them with a sufficiently strong signal, but the cheap electret condenser microphone commonly found in consumer-grade stuff doesn't offer this, so the preamp has to do a lot of amplification, which also magnifies the noise of course.

Converting one lossy format to another one is always bad, you should only ever do this only when you need to strongly reduce the file size or the original format is incompatible with what you'd like to use it for.

Can't you describe that "high pitched oscillating noise" a bit more precisely? If it's really a feedback issue I'd expect it to be very loud (drive one of the inputs into clipping). If it's not particularly loud, it's probably rather something like this and has indeed to do with grounding.
