You could try Ableton Live. I have heard of many people using it for live performances. It can play back MIDI and recorded audio, does looping and many other things, so it should meet your needs.
If you are on a budget, you could try Reaper.
Both programs have a free trial, so you can try them both and see which better fits your needs and style.

What you are looking for is a feature often called "render stems". For each track it contains a single WAV file rendered from the start of that track. Yes this is very wasteful of disk space, but you can at least easily import the files into any other DAW and they will line up correctly. It is up to you whether you need to export with effects on or not.

Cubase and Sonar will both let you alter parameters of groups of tracks as well as single tracks, so you could group all your cellos and fade them all in using one control if required.
In fact you could do the same with any parameter, and automate the entire thing.
